I don’t know about you, but this weather *eyes the sleet* makes me want to hibernate. I dislike the cold and wish it was acceptable to do the school run wrapped in a duvet (cinched in at the waist with a belt, obviously – I’m not a complete fashion heathen!)

Once home, I’m guilty of switching the heating on for a bit and maybe, possibly, pulling a blanket over my legs whilst I watch TV schedule blogs and process admin.

One thing I’ve managed to avoid this winter is comfort eating. And to be honest, I find that a misnomer because whilst it feels good to eat something warm, there is no comfort in slipping into a carb coma whilst watching This Morning and certainly no comfort in having to baby oil your thighs to help drag your jeans over your newly acquired ‘winter thighs’.

This winter I’m trying to eat better. Whilst a simple salad could never be described as warming, just adding extra vegetables to your meals is an easy way to increase your ‘5-a-day’; adding vitamins and flavour. And by using frozen vegetables you could save a lot of time (it’s all pre-prepared – what’s not to love?) and money whilst reducing your waste.

This week I made cous cous using frozen sweetcorn and frozen Mediterranean vegetables (a mix of peppers, courgettes, aubergines and cherry tomatoes) with a few chopped olives

and a vegetable risotto using a left over onion, some frozen peas and frozen peppers

I’m also a fan of ‘stealth’ sauces: onion, garlic, leftover veg or frozen veg, a squidge of tomato puree and a tin of tomatoes then blitzed. It’s useful to disguise veg for fussy eaters and is incredibly versatile as you can use it as a pasta sauce or pizza topping or even as a dipping sauce.
